Ajwain Powder derives from ajwain seeds. These seeds are uncommon spice that's found in certain areas of Asia. These tiny fruit pods is aromatic, has a slightly bitter and pungent taste, similar to thyme, only stronger. A tiny amount of raw ajwain seeds will over powder the flavor of a dish.
Ajwain has 2.5% to 5% essential oil, primarily phenols-thymol (35% to 60%) and carvacrol (about 11%). Also known as ajowan and carom, this spice is popular in South Indian, Omani, Egyptian, and Iranian cuisine. It has an abrasive thyme-like flavour with a slight hint of brutalized mint. This flavour is due to the presence of thymol in the seed. Thymol not only provides the flavour but also induces a bitter and somewhat spicy-hot sensation on the tongue. It finishes with a slight numbness or tingle similar to Szechuan peppercorns .
